Monterey Jack is an American semi-hard cheese usually made using cow's milk.

My Monterey Jack has dried Shiitake mushrooms inside the cheese wheel. We actually grew the Shiitake mushrooms that I used.





Here is the cheese wheel right after being made


Shiitake mushrooms are native to Japan and they are a regular feature of many Asian cuisines including Chinese, Vietnamese, Japanese, Korean and Thai.

The Shiitake mushrooms that we grew are genus, "Lentinula", species "edodes".


Monterey Jack cheese was first produced by David Jacks. David Jack started his career at Fort Hamilton in Brooklyn New York. Yes, the same place where Joan went to Fort Hamilton High School.
